Banana Chips and Mango Salad

ingredients:

(Serves 2)
For the salad:

  • 1 mango, sliced into thin strips
  • 1 red pepper, sliced into thin strips
  • 1 spring onion, sliced finely
  • 1 red chili pepper, sliced finely
  • A handful of coriander, finely chopped
  • ½ cup of bare Simply Banana Chips, broken up
  • A handful of peanuts (optional)

For the dressing:

  • Juice of half a lime
  • 1tbsp sunflower oil
  • 1tsp coconut sugar
  • 1tsp Thai fish sauce (or tamari or soy sauce)
  • 1tsp rice vinegar

directions:

  1. Toss all the ingredients for the salad together, except the banana chips and if using, the peanuts.
  2. Whisk together the ingredients for the dressing and pour on top of the salad. Top the salad with the broken up banana chips and if using, the peanuts and serve immediately.
