Gluten Free Chocolate Almond Butter Banana Bread

ingredients:

For banana batter layer:

  • 1/4 cup butter
  • 2 ripe bananas
  • 1 egg
  • 3/4 cup coconut sugar
  • 1 cup gluten-free flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup whole milk Greek yogurt
  • bare Simply Banana Chips (or your favorite flavor)

For chocolate banana batter layer:

  • 1/4 cup butter
  • 2 ripe bananas
  • 1 egg
  • 1 cup gluten-free flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup chocolate almond butter
  • 1/2 cup whole milk Greek yogurt
  • bare Simply Banana Chips (or your favorite flavor)

directions:

  1. Start off with your banana batter layer. Combine dry ingredients (except banana chips) in a separate bowl and set aside. Cream softened butter with two ripened bananas. Mix in egg then dry ingredients. Fold in Greek yogurt.
  2. Next, make the chocolate banana batter by recreating the banana batter in a separate bowl. However, this time omit the coconut sugar and add in chocolate almond butter at the end.
  3. Oil or grease a loaf pan. Pour layer of banana batter, top with few banana chips, then add chocolate banana batter over and repeat. Once all batter is poured in, top with more banana chips.
  4. Bake at 300 degrees for about 1hr 30mins or until a knife comes out almost clean.
